Sure I knew this at one point, but I have forgotten.

How do you get into the bitty where you decide which programs will open automatically at startup?

If you right-click on the Start button and then select "explore" that will open Windows explorer within your profile.

You're looking for the "startup" folder within "Programs"

Got there, but startup folder is empty?

What I'm wanting is to stop certain programs begin auomatically when I turn on my pc.

Start ----> Run     Then type "msconfig" into the box.

Select the "startup" tab from the box that comes up and this will show a list of all programs started automatically at startup.    Untick any of these to prevent them starting up when you switch computer on.

The easiest way to mess with the startup is to download CCLEANER and you can safely disable or delete entries in your start up.
