Without wanting to put a dampener on things - think you should still do something similar to get in shape if it floats your boat - the distances you're talking about are pretty minimal/exercise bikes are pretty cushy.
For context (admittedly whilst training for something) I used to cruise 100km/day on an exercise bike, and I was by no means super-fit.
This said, and for balance as I realise I may seem rather negative, I'd be willing to bet at Evs that you won't cover 1500km outdoors on a real-life bike between now and Xmas.

have just started back at the gym after a few months out, stated i never do cardio actually

How long did it take you to do 100km? 3hrs. Would go 1hr - 3min break to replenish water etc. - 1hr - 3min - 1hr Then onto some strength work, then a light swim. To be fair, I was something of a man of leisure ('freelance translator'). What I would say is that this (un)remarkably doesn't translate perfectly to one's ability on a real-life bike in the hills/wind/rain etc.
