Title: BBQ ideas Post by: Dubai on July 25, 2012, 03:08:59 PM Gonna host BBQ for my nans birthday in couple weeks, be mainly family haven't seen in ages
Looking for ideas, from the ridiculous to the sublime. Anything will be considered although I'd rather not have to buy any additional equipment or dig any holes. Basically want some "Wow" ideas or dishes that you've seen before Title: Re: BBQ ideas Post by: Beaver808 on July 25, 2012, 03:13:38 PM You could hire a Hog Roast? Impressive stuff, if everyone likes a good bit of pork..
Title: Re: BBQ ideas Post by: edgascoigne on July 25, 2012, 03:20:52 PM I've made really nice lamb burgers before using...
Lamb mince (c80g/burger) Mango Chutney (3 tablespoons/500g of mince) Apple Sauce (1 tablespoon/500g of mince) Finely chopped fresh mint (Sensible amount) Mix it all together, form into patties, leave to chill for a bit ahead of bbq'ing in order that they can firm up. 4-5 mins each side should do it. Serve in a bap with rocket and a bit of mango chutney. Title: Re: BBQ ideas Post by: treefella on July 25, 2012, 03:30:45 PM Just nip into Waitrose.

"Holding a BBQ today. Everyone welcome. Burgers, Steaks, chops and sausages. There is also a vegetarian option: They can fuck off." Made me laugh anyways. Title: Re: BBQ ideas Post by: MPOWER on July 25, 2012, 03:51:38 PM What people want is good food forget about the fancy stuff/ Steaks etc .
IMO You need the best produce to begin with. Folk want a good Hotdog and a tasty Burger. Boneless skin less chicken thighs with Barb b q Flava glaze. This chap would put you a box together for you. Also if you wanted fancy he could advise for sure. http://www.jtbeedham.co.uk/ Regards M Title: Re: BBQ ideas Post by: StuartHopkin on July 25, 2012, 03:54:27 PM Monkfish wrapped in bacon with a chili lemon glaze ftw
Title: Re: BBQ ideas Post by: DungBeetle on July 25, 2012, 03:58:53 PM Simple but effective - cut up some large butternut squash pieces, sprinkle with oil and wrap them individually in kitchen foil. Stick them on the less hot part of the BBQ and leave them for ages. They end up caramelising and are soft in the middle if you cook them slow enough. They will go dark on the outside even inside the foil. Take them off when you can slice through them easily.
The monkfish dish above sounds good as well. Title: Re: BBQ ideas Post by: Laxie on July 25, 2012, 04:04:11 PM Strawberry daiquiris and Mojito slushies are lovely if it's hot out. Easy to make and most people really enjoy them. Give a shout if you want a list of ingredients.
Title: Re: BBQ ideas Post by: millidonk on July 25, 2012, 04:11:15 PM I went to a Scottish mate's bbq, after the normal grub was dusted off they said time for dessert and whacked a load of chocolate bananas with marshmellows on the bbq. I'm not a huge fan of sweet stuff but the women loved em and that was like 5 yrs ago so obv made a lasting impact.

Title: Re: BBQ ideas Post by: Dubai on July 25, 2012, 04:40:02 PM Dave - why don't you try and cook an Umu skillet fish seeing as they have taken if off the menu :( Would mean going to Whole Foods Kensington- and thats a dangerous place, I need to be put on a leash and guarded carefully in there or crazy stuff ends up in the trolley. Got Alaskan King Crab Legs and an Ostrich egg last time from there! Title: Re: BBQ ideas Post by: sovietsong on July 25, 2012, 09:55:36 PM I love nothing more than ribs on a BBQ. Trick is using a dry rub and cooking the ribs off the direct heat for as long as possible.
Easy way to cheat is cook them on a low heat in the oven and finish them on the BBQ at the end. Simple but people don't have them often so a big hit! Title: Re: BBQ ideas Post by: RioRodent on July 25, 2012, 09:58:50 PM For something a bit different - Red Gurnard
(http://www.marinewildlife.co.uk/Portals/0/Welsh%20Fish%20Book/MW000104.jpg) Cut off head and fins Cut 2 or 3 slits down each side Smear generously with butter Sprinkle with black pepper Wrap in foil and cook for 10 mins or so (depends on size). All it needs is nice bit of bread to go with it. Title: Re: BBQ ideas Post by: corkeye on July 26, 2012, 07:32:18 AM I saw an old jamie oliver recipe once where he got a whole salmon, wrapped it firstly in a bed of mixed herbs and then got some pages from a newspaper and wrapped it neatly and tight with string. Then he dunked the lot in water (he used sea water, but normal tap water will be fine), and then put it straight on the barby. The newspaper, as its soaked in water, smokes gently, and the herbs not only perfume the fish, but protect it from burning. I guess you should also turn the lot over once mid way through for even cooking. Then you carefully remove it from the barbeque (try to avoid burning yrself) and cut through the paper, voila- you've got freshly cooked smoked salmon.
