Banana Bread1/2 cup cooking oil
3 eggs (beaten -
good beat though - not bad beat)
3 ripe bananas (mashed,
note bananas going slightly over-ripe are best - buy the last day sale ones)
2 cups plain flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup of nuts (
optional)
Beat oil & sugar together. Add eggs & mashed banans & beat well. Add sifted dry ingredients, milk & vanilla. Mix well and stir in the nuts (if wanted). Pour into a greased & floured loaf plan (9x5x3 inches). Bake in a preheated moderate oven (350F) for about 1 hour. Cool well & store overnight before cutting. Enjoy.
Other Recipes in the book include, shrimp & banana curry, banana cream pie, & banana meringue pudding. Each recipe available - 1 pint each
