Just been told Stars are replacing FPP's, and I have to use them or lose them before Jan 1st?
Can someone confirm if this is true?

I don't play Star's much these days and have very limited choice of redemption at current VIP level, if I need to get rid I might have to play a bit so I can actually get something decent with them.

You won't lose them entirely. Amaya are reducing the value of them and they are being re-named "Star coins" or something.

It is recommended that if you are not Supernova that you buy tourney tickets with them, remembering to buy the highest value tournament ticket(s) you can for optimal value!
