I love nothing more than ribs on a BBQ. Trick is using a dry rub and cooking the ribs off the direct heat for as long as possible.

Easy way to cheat is cook them on a low heat in the oven and finish them on the BBQ at the end.

Simple but people don't have them often so a big hit!

For something a bit different - Red Gurnard



Cut off head and fins
Cut 2 or 3 slits down each side
Smear generously with butter
Sprinkle with black pepper
Wrap in foil and cook for 10 mins or so (depends on size).

All it needs is nice bit of bread to go with it.

I saw an old jamie oliver recipe once where he got a whole salmon, wrapped it firstly in a bed of mixed herbs and then got some pages from a newspaper and wrapped it neatly and tight with string. Then he dunked the lot in water (he used sea water, but normal tap water will be fine), and then put it straight on the barby. The newspaper, as its soaked in water, smokes gently, and the herbs not only perfume the fish, but protect it from burning. I guess you should also turn the lot over once mid way through for even cooking. Then you carefully remove it from the barbeque (try to avoid burning yrself) and cut through the paper, voila- you've got freshly cooked smoked salmon.
