I too liked Spike Milligan's one. I tried to Google one that I remember being in the paper years ago. Some guy was less than happy that his ex had been uber-unfaithful and still took him for every penny. Her epitaph, which I guess she didn't have much to do with, simply read "At last she sleeps alone."
And not an epitaph, but on similar lines, there was a nice one where some old nag had been promising to "dance on his grave" for the last 40 years of his life. His last will simply said "I wish to be buried at sea."

Now, deal me my hole cards!
Or simply "I've still got outs!"
