on a more serious note (though not a cash game player) maybe a reraise on the flop in the first situation to find out where you stand and on the second one maybe a rereraise preflop?

if u hadn't shown his hand i would have guessed he had QQ.  i suppose u can say he played it well. did his bet on the flop rule out AA or QQ in ur mind? (i'm asking these questions to help myself btw).

hand 1 you have to bitch slap bet that flop or at least check raise.  Once he lays the repop on you you can safe fold knowing you are well owned.

A-K, A-Q, T-T, J-J, Q-Q, K-K, A-A

I think you can escape this, Q-Q, A-A and A-Q have you cooked, whilst most of the other hands will probably slow down on the Turn.

Also, I can't imagine too many players moving all-in on the River with anything you are beating.
