I made dhansak last night but decided to experiment and switched the pineapple for mango. bloody lush it was, I impressed myself

let the games begin....

this is all the ingredients (apart from a little salt)

so what we have

lentils
red and green chilli
paprika
cumin
cardamon seeds
cloves
turmeric
coriander
cayenne pepper
basic curry sauce base (i make this and keep it in the freezer - basically just some spices, onion, tomato puree and water, all reduced down and then blended).
chicken breasts


so basically i will boil the lentils, and then remove, brown and seal the chicken, fry off the chillis, add some of the curry paste, add the other spices, and the put the lentils and water back in along with the chicken, and then leave to simmer and thicken for about an hour.

will be served with nan breads, unfortunately not home made....

no mango or pineapple in sight

garlic and ginger in the base. the base is amazing, was shown to me by an indian friend. it is the basis for just about  any kind of curry you can think of.

nearly ready...if i was using lamb i  would probably add some more liquid and let it cook for hours, making the meat really really tender. not much point with chicken.

thought it might be. the colour's looking very good there

what's in your base? presumably fairly similar to what I use.  off the top of my head onion, tomato, oil, garlic, ginger, salt, chilli, cumin, paprika, coriander, turmeric. think that's about it cooked for at least a couple of hours
