For future reference by the way, Aunt Bessie makes amazing mashed potatoes and they're ridic easy.
Mash potatoes are ridiculously easy, but your ready made ones at posh supermarkets are >> Smash.
FWIW Boil potatoes for 15/20 minutes or so. Don't let them get too soggy, check at 15 that they haven't started falling apart when you stick a fork in them. If they have, stop then. Add salt and pepper to pan, and mash them up with masher. You can add cream, but a bit of milk and margerine/butter is fine. You really don't need to add much, and less than you think is probably fine. If you don't think they are creamy enough, you can always add more.
I don't like with really creamy mashed potatoes, and want them to have a decent texture, so don't mash them for too long either.
Mustard is good in the potatoes, dijon is probably about right, but I don't even add that now I have young kids.
Choose your potatoes well, but the supermarkets even do the hard work here too, and the shelf is normally marked if they are suitable for mashing.
