he was scottish nice guy good food and didnt mind me asking to mess up his menu by asking for bits of this and bits of that

I've never had a problem with the food, and I've always eaten at DtD when I've gone there.
I think gammon steaks served with pineapple or mushroom is good, as is steaks with fried tomato and a choice of fries or mash. Baguettes with various fillings on a bed of salad. Pasta dishes, fried breakfasts, salads, burgers, roast dinners on a weekend are great, as you can make everything in batch ready for service. Could do some chicken wraps on a bed of salad, prawn cocktail, potato wedges, spicy & BBQ chicken wings, steam fish on a bed of rice with a side order of vegetable, meatballs are really easy to make and again can be easy to do when everyone wants them at the same time.
I think rotating the menu throughout different seasons is vital, but like I said, I always found the food good quality and tasty.
