I seem to get this situation a lot in the $6.50-$27 45mans I'm playing on Stars atm.
This min-raise the flop when you c-bet seems to be the new fun thing to do. Usually occurring when you've got a big pair and only 1 overcard hits.
Is it best to just let them go and give them credit for it?
