You can sometimes shave a few quid off your flights by going with an american based carrier, I would just stick with Virgin myself as I've found them to be the easiest to deal with and occasionally you can bink a nice upgrade, as well as not having to change somewhere in the US.

Average cost of a trip
I would say that for each week you are spending in Vegas I would allow £500 for food and drink. This gives you a couple nice meals a week, few nights on the pi55 and other incidental costs.
A hotel can cost you from £180 approx for the Imperial Palace, to £650 approx for the Wynn/Venetian
A midrange hotel right on the centre of the strip is going to set you back around £250-300 approx.
I would always pay the extra little bit to stay in one of these rather than the Imperial Palace. Whilst it has a bed and a shower etc. I wouldn't even entertain the idea if you are travelling with partner.
I'm not a hotel snob I just know it's by far the worst place I've ever stayed in Vegas and for a minute amount of money more you can get a much better hotel.
Poker money required is all down to the individual, you need as much as is required to play the tournament/ring games you wish to play.
There are tournaments and cash games for every bankroll up and down the strip, so it's never gonna be a problem to get a game!
Capping off I would say that for a week in Vegas you are looking at costs of:
£500 Flight + your domestic flights to London if required
£250-300 centre strip hotel
£500 food and incidentals money (you may find you have some left over and this is aimed to make it the case)
£xxx Poker bankroll
£xxx hookers and blow
So I'd say for £1300 + poker money you can have a great week there and just add on £800 for every extra week you want to stay.
You can obviously trim the food expenditure by eating at Dennys/McDonalds etc. I think it's nice when you are on holiday to get some nice dinners in and treat yourself though.
Cheap Bites
Just a shortlist of places that do some decent cheap and cheap-ish food
Ellis Island: One block off the strip (Behind Ballys I believe). Basically it does steaks/bbq pizzas and all similar types of stuff. They have a steak special for under $10 which is meant to be really good. It also has a microbrewery?
Food courts: There are food courts all over Vegas with a
variety of foods available. Chinese, Burgers, Mexican, Pizza and just about anything else. Situated both in casinos and along the strip.
Outback Steakhouse: Located above Casino Royale, this place does the usual stuff you'd expect. Not mindblowing but decent value for money.
Peppermill Lounge: Another diner on the strip located near to the Wynn. Big portions and open 24hrs I'm pretty sure.
TI Buffet: One of the best value buffets in Vegas, with all the usual varieties.
Grand Lux Cafe: They have one of these in both the Palazzo and Venetian. Lots of variety and big portions.
