Handcent SMS is the best SMS app I've come across for android - very customisable as well.

SMS backup is also a must if you want to back up your texts.

Others I have include:

Barcode scanner
Shop Savvy
Bar Control
Bet on the move
beebplayer
cab4me
Facebook sync
handyCalc
Google Sky Map
Locale (paid)
Missed Call
Movie Finder
MyBackup Pro (paid)
Power Manager
Ringdroid
Seesmic or Twidroid (paid) if you use twitter
The Weather Channel
Wifi Fixer
Yata

and the best app of all imo - Wireless tether (but only if you have root access)

Oh, and saw someone with a Nexus using 'Swype' - what a brilliant app for phones without a hardware keyboard. Makes text entry an absolute breeze.

Unfortunately, it's only in beta at the moment and they've stopped giving out downloads.  But I'm sure it will be in open release soon.
