Can't argue with a lot of this, so will just make a couple of comments:
The off-strip picks are very good, been to about all of those, but I haven't been to Goyemon as I don't like Sushi, but rumoured to be pretty good AYCE for ~ $30
Breakfast - Add Tableau and the Country Club very good breakfast choices in Wynn if you have plenty of time and don't mind $$$
Finer Restaurants: Alize is in Palms iirc and over-priced by a fair margin. Milos does a $20 lunch deal which is exceptional value (dinner less exceptional value..)
Yet to see the burger truck, but heard good things. Holsteins is the best burger bar I have been to in Vegas by far (although Carnevino and Delmonico both do an excellent burger on lunch menu reasonably priced)
Sunday Brunch - Country Club @ Wynn for their Jazz brunch imo.
Best buffet nowadays is reported to be Bacchanal @ Caesars ainec. I'm not a buffet fan, but will defo try it out next visit.
I love food in Vegas, it's probably my favorite place to eat because there's just so many good quality restaurants everywhere. Below is my list of my fav restaurants, some are off-strip and some on-strip. Might be worth googling some as they are normally all worth the journey.
Best breakfast:
I love breakfast in Vegas, it's probably my favorite meal and I've been to most breakfast places in the city. My favorite by some margin is "Cracked Eggs". However, it's a little drive off the strip so might not be realistic if you aren't renting a car for your stay. Saying that it's never disappointed and the menu is incredible.
Random restaurants that stood out to me as being a lot better than their competitors:
Musashi, Sen of Japan, Lotus of Siam, Mint Indian Bistro, Monta, Goyemon, the original Firefly, Todd's Unique Dining.
finer restaurants to visit:
jaleo (spanish fine dining @ cosmopolitan)
picasso (bellagio french style)
Carnevino (palazzo hotel, italian & steak)
try Alize * (Finer dining, Aria) and Milos * (greek food cosmopolitan)

buz bbq (my friends rated it higher than me, but I don't have a lot of experience with American BBQ to compare. We did go to 'Lucille's Smokehouse BBQ' which I thought was much better (they have their own smokery and slow-cook all the meats over 24-48 hours super delicious) but it's a little further out near the Green Valley Ranch

bachi burger - a little more expensive but v good (I preferred holsteins)
holstein burger is a must (gold standard burger prob the best)
cheap auce sushi at sushi house goyemon <--- delicious
settebello best pizza
tableau at the wynn for sunday brunch
monta noodle house voted best meal under $10 (pork belly bowl)
Cosmopolitan got voted best buffet (in the world?) last year however I haven't tried it yet.
