I agree, and Monica seemed to get quite angry when they got it wrong!!
I have worked in Catering for 26 years I I don't think I have met anyone with experience of preparing Urchin. Including quite a few chefs with over 40 years experience.

I actually thought the urchins were a good test. They would have obviously known they've not worked with them before but I can see how it works as a basic palette test (e.g. did they taste it to see what would go) and a test of instincts.
Monica did give credit to the ones who gave it a good effort.

tbh, she told them what it tasted like, and they should know that you throw away anything that resembles a mouth or bum, or is black within a shellfish.
With these tests I ask myself what I would have done, but with the Urchin I still have no idea. I'm pretty sure I wouldn't of tried to pass it and make a sauce out of it.

Well, that was a weird one. 4 excellent dishes in the invention test yet being able to plan and make own food resulted in total collapse for 2 of them.

It does feel like his to throw away at the moment. Though I imagine he might have to be careful not to push the foraging thing too far. Also Michel really seems to like Oli so that could work against him.

yeh she's a hero. it's her job to pressure them and see who can take it. she put in the volume as it were early on to get in the position to be the biatch! and she knows her stuff ! +it's edited for tv so can't all be taken as all that she's about

I read all these comments before I watched it today, and am currently 'at the presentation' of this plate. and then you see the techniques he's used to cook it and you're just like wat the actual fucking fuck. absolutely incredible. food looks potentially so nice, just don't serve it like that ffs come on really. rofl edit also absolutely hate the half hour episodes
