He could actually catch a Glasgow-bound train from Edinburgh Haymarket Station, too. Is the Tram running yet? Should be soon, construction srtarted as recently as 1977, & it is only 17 zillion over budget.

Have at least one drink in Deacon Brodie's near the top of the Royal Mile and also try The Ensign Ewart. Both 'proper' pubs. Back in the day it was fun to try and drink your way down Rose Street, but these days it's all poncy wine bars. Mate said Grassmarket/Pubic Square is a good for the night out, plenty of bars and the strip clubs are all next to each other. If you want upmarket bars/clubs he said you'll want George Street. He is more Pubic Square orientated, so wasn't much help with winetasting unfortunately  Haymarket has some good curry houses that have won awards, he said that Indian Cavalry Club is a good one, but I'm sure you're probably able to sniff out some fine dining if you want some.

If you want good beer the Bow Bar (near Grassmarket) will serve a better pint than most (may even get a Loch Ness beer there if you're very lucky ;-) ) - great traditional pub but not the liveliest for a stag affair. Blue Blazer also serves a great pint and is just around the corner from some of the more alternative entertainment venues.

They are extremely expensive and don't expect to be tipped. I like Edinburgh and it's people but my choice would be, go to Dublin.
