The second row refers to the first in that there is one one: 11. So the next row there are two ones: 21. And so on.

Do you think they slow down the missing vowels round by a second or two, to give us a chance to think/guess? I get most of them before the contestants and that can't be right!

Possible the people in the studio are staring at a blank screen for a bit, before the clue comes up.
Seems odd some of these folks are getting obscure clues about all sorts immediately for 3/4 of the quiz, but everyone can beat them on vowels.
