Looks good but I'm you lost me on ears and crumbs.
So much i could tell you Ralph. The ear is that open slot at the top, produced by slicing into the dough with ones lame prior to baking. The crumb relates to the texture and air gaps produced during fermentation.such a satisfying process from start to finish. Nice bread! Looks really good to me.
We have been selecting a country at random each week or two and cooking dishes from that country. So far we did Turkmenistan (hearty but kind of boring) and North Macedonia (bit more interesting, but not quite as exciting as Turkish which I know very well already). Next we draw Bhutan and we finally get to use some spice - so we will be making 'momos' this week.

It wasn't perfect, I might have lost some points if it was a Bake Off technical challenge - but pretty pleased it worked so well after all this time.
