Mine always taste like a pair of Clarke's after wards.

Top tips please and does and don'ts.

Here's how I cook steak.

1. Buy a decent piece of meat to start with
2. keep it out of the fridge for a while before cooking so it's near enough room temperature when it hits the pan
3. use a grill pan - make sure it's dead hot before you put the steak in it
4. brush steak with a little olive oil, stick on some salt and pepper
5. bung steak in hot pan, turn only once during cooking,  +/- a couple of minutes each side (depending on your preference)

Putting it on at the end does the same thing. But if you put the salt on earlier it's drawn into the steak and adds flavour. If it's a good cut of steak it'll still be plentifully moist.

steak out of fridge and coat in oil (not olive)
season about 20 minutes before cooking.

get pan/skillet really hot - i mean so hot you cant hold your hand over it for more than a second

place steak into dry pan. cook for about 1 minute either side, making sure it is sealed

put some unsalted butter and parsley on top of the steak and put it in the oven at 200 for 5 minutes.

while this is happening, deglaze the pan with a little olive oil, and add some button mushrooms, quickly fry them off (just to annoy ironside)



the key to this is the really hot pan. and allow the steak to rest for 5 minutes before serving.
