I'm going to make this thread easier to reference tonight.  I'll be combing through it, adding links in the OP to apps you lot have recommended here.  If you notice anything added that has since turned to rubbish, let me know and I'll remove it.  Cheers!

c:geo is the best geocaching app I've found, but mainly because its free! I think they lost the live mapping after one update, but it's back again and works fine.

Edit, I may as well add some other apps I've found good, now I'm up to my 4th Android device:

Games:
Alchemy
Cut the rope
Jewels
Robotek
Stupid Zombies
Tower Raiders 2

Useful:
Catch (note taking app)
Amazon Kindle (not been mentioned yet?)
Business Calendar Free (excellent calendaring app with good variety of widgets)
Dropbox (cloud storage)
eBay (I use the official app, does the job)
Fancy Widgets (good customisable replacement for the front screen clock/weather widget)
RealCalc (for those who can't do without a scientific calculator)
Sky+ (remote recording on your home sky box)

Good stuff, will add them to the OP.  Also nice to know c:geo got sorted too.  I really liked that app and was gutted when they lost the live map feature.  Adding it back now.  Cheers!

3 days later, I've managed to root my phone and put a new rom on it.  Not a task for the faint hearted.

Anyway, while on my knowledge quest of all things android the last few days, I stumbled across something called Plan B.  Very good if you lose your phone - it's installed from the market once you know you've lost it and sends you an email with the GPS details.

Have always used CyanogenMod on my previous android phones as my ROM of choice, but it hasn't been available for the One X as a stable version for actual daily use.

Anyway, it is now so put it on my phone today. Wow, what a difference. The phone was alwayspretty qquick, but now it's like lightning. Incredible difference and so happy I took the time to do it today.

Really can't get better as a game than 9 Innings. Free and yet the level of detail is incredible.

Baseball game (obv). You pick and build your team, you can play offence, defence, run, steal bases, field...

You trade cards and improve your squad. Different modes like home run derby etc.

As good as it gets.

Is it compatible with Jellybean?

I'm using the latest version of CyanogenMod, which is version 10 - and that's based  on Jellybean.

Nexus not supported by CyanogenMod 9 or 10 it appears, only up to 7. something. So I don't think that's Jellybean...
