It's a good question, and I don't really know the answer, but thinking about it, it's probably because...
I wasn't taught to do it.
I have never seen or heard of anyone else doing it.
I don't know a good, humane way of catching/killing them.
I just don't fancy it. I think that for the most part, herbivores make better eating than carnivores, and prey animals make better eating than do animals which are themselves hunters.

Pictures? Yes. Will post some tomorrow.
They were playing at running away today. Horses like to play at running away.
It was triggered by me starting the lawnmower, they haven't seen it before and it spooked them, so they ran hell for leather to the other end of the field. They soon realised that it wasn't really a threat, but they obviously decided that it would be much more fun to pretend that it was.
They stood side by side at the point in the field that was closest to the grass that I was mowing, then, as the mower approached them, they pretended to be really scared, rolling their eyes and tossing their heads. When the mower got really close, they broke ranks and galloped away, tails high, to the other end of the field, only to return immediately and do it all over again.
They were just like two big school girls. you could almost hear then giggle.
