Seriously now on the egg front.

Do you buy supermarket eggs?

We used to but since a friend of my dads has now got some chickens, we get all our eggs from him and the taste is noticeably better, and the colours much more vibrant.

Yes. to my utter shame, I buy my eggs from the supermarket.

I agree. You can't beat proper free range eggs, (And I don't mean 5 million chickens squashed together in a barn eating a pre-prepared meal mix) I mean free to roam and feed on beetles, worms, grubs etc.

I would keep some hens of my own, but there are several reasons, (Some quite complex) why I don't

Why bother to look for big ones? Smaller eggs have a better yolk/white ratio and the yolk is where the flavour is.

Also, there must be a local farm or something where you could avoid the supermarket version Tom. Fresher and freeer and also mush more supportive of the local economy.

You're right of course.

I, Tom McCready, do herby swear, that I will go forth from this place forthwith and find a source of fresh eggs. Swelp me God.

Going back a few years, when i lived up north, we used to get the egg man coming round every thursday... we always had a dozen fresh farm eggs each week, and nearly every week you would get at least one double yolker Smiley

Brightest yolks I have ever seen and the taste was a thing of beauty.

I miss the egg man Sad

More egg facts.

Can’t remember if an egg is fresh or hard boiled? Just spin the egg. If it wobbles, it’s raw. If it spins easily, it’s hard boiled. A fresh egg will sink in water, a stale one will float.

Eggs contain all the essential protein, minerals and vitamins, except Vitamin C. But egg yolks are one of few foods that naturally contain Vitamin D. Eggs also contain choline, which is necessary for healthy cell membranes in the body. Choline stimulates brain development and function and helps preserving memory. Eggs also are good for your eyes because they contain lutein which helps prevents age-related cataracts and muscular degeneration. In fact, eggs contain more lutein than spinach and other green vegetables.

The color of the egg shell is not related to quality, nutrients, flavour, or cooking characteristics. White shelled eggs are produced by hens with white feathers and white ear lobes. Brown shelled eggs are produced by hens with red feathers and red ear lobes. Brown egg layers usually are slightly larger and require more food, thus brown eggs usually cost more than white eggs. An egg shell has as many as 17,000 pores over its surface.

A whole egg is about 3 tablespoons worth of liquid, the egg yolk measures about 1 tablespoon of liquid. Older hens tend to lay bigger eggs but double-yolked eggs are produced by younger hens whose egg production cycles are not yet synchronized. There are about 70 calories in an uncooked egg and 77 calories in a cooked egg.

China produces the most eggs, at about 160 billion per year. In the US, about 280 million hens produce more than 65 billion eggs per year. A hen can lay about 250 eggs per year.

Chicken are descendants of the red jungle fowl (gallus gallus spadiceus) that lives in Asia. The chicken is one of the first domestic animals, appearing in China around 1400 BC. The are some 150 chicken species and hundreds of chicken breeds.

Blimey. Once you start digging, even the seemingly simple things are incredibly fascinating. (This statement excludes Kev)

Tom,

What is a "fold yard", to which you referred in that lovely "Farrm Hwking" piece, please?

Oh - & eggs. Duck eggs ftw. Incredible memories of duck eggs. Never eaten one though.

A fold yard an enclosed (Usually walled)  section of land to the front or rear of the farmhouse that farmers use for gathering or corralling animals. (usually sheep or cows)

Hence the phrase "Bring into the fold"
